How do i prepare and cook trout?
my 6 year old went on a fishing field trip with his class today and caught a pretty good sized trout. he is determined to eat it but our family doesn’t eat fish other than the occasional shrimp or lobster so i have no clue how to prepare it as far as scaling and de-boning, it has been gutted though.
as far as cooking i was thinking the easiest way would be to season it with salt, pepper and dredge it in flour and fry it in a little butter and olive oil, if you have a better suggestion please let me know but my main concern is the scaling and de-boning.
First of all…..Kerry…..you don’t take the skin off a freshly caught trout. BLASPHEMY! You want that skin, baby! You will have to get the scales off. Since you haven’t done it before, I am guessing you don’t own a scaler. That’s okay; a serrated steak knife works great. Take the fish outside. Grab on to the tail with a small towel, with the fish’s head pointed away from you. Hold the knife perpendicular to the body, and starting at the tail, firmly scrape toward the head. Scales will FLY, so watch yourself. When all the scales are gone the skin will feel very smooth when you rub your finger on it. Now, with scissors, clip off the fins as close to the body as you can. You can cut off the tail and head if you want – don’t have to. Rinse off fish and pat dry. Roll it through some flour that has salt and pepper in it. You could continue with a true breading, but with a fresh trout, that’s all I would do. You then pan fry it in butter about 5 minutes on each side, or until the skin is crispy and the meat is opaque. That’s it, man! Now, I can hear you thinking, “But, the bones are still in it.” That’s okay. When that fish is cooked, the meat literally slides off the bones. With the fish on a plate, put fork parallel to the spine, and with gentle pressure, drag fork toward the belly, The meat comes off in a bite sized piece and the bones remain attached to the spine. When you’re done, you’ll have a skeleton just like on the old Sylvester and Tweety cartoons!
